National Taco Day with Santa Maria

Today is National Taco Day and as Mexican is our favourite type of food to eat we were not going to let it pass without joining in.

Hubby and I decided that a Date Night was in order as then we could have a little extra spice; the kids do eat mexican but like to have it a bit milder than we do! Sometimes it is difficult to cook the same meal for hubby and I as I am vegetarian and he is a real meat lover but the one thing we have found we both like is vegetarian mince – so we thought this would be good to use.

We fried up a couple of onions, some cubed Halloumi and the Veggie Mince, we then added Santa Maria Taco Spice and water before letting it simmer.

We ate this mix in Taco shells with medium heat Salsa, some salad and grated cheese. They looked (as you can see from the pictures), smelt and tasted divine!

Santa Maria gave us a helping hand by sending us Taco Shells, Spice mix and Salsa to use, they really added the to the dish with a mexican feel. Santa Maria also have other recipe ideas on their website to help inspire your meals – I love the sound of using Goats Cheese in this vegetarian taco idea and Hubby has decide next time he wants some Beef in his!

    These look really yummy! I love Mexican food but don’t usually have tacos, must try some soon as I love the idea of a crispy shell!
